Well, my all-time favourite chapter is The Silver Doe. I love Ron coming back and literally fighting his demons to save Harry and take one more step towards saving the world. I love the Ron & Harry hug, and Ron showing his heroic side, and I love Snape helping them when they don't know it's him.
My second favourite thing in the books, which takes place over a few chapters, is the Shrieking Shack scene in 'Prisoner of Azkaban'. This is a favourite for obvious reasons - it's the reunion of Remus and Sirius, and where we get most of their backstory, and where we find out Sirius is a good guy and Harry's godfather. I love the whole time-turner bit as well, actually. I love a good bit of time travel.
Finally, I love Occlumency, the chapter where Sirius and Snape go head to head over Harry taking lessons from Snape. Sirius is simultaneously protective and vengeful, and the two of them sizing each other up in the kitchen is kind of awesome.
A couple of other little and not-so-little moments I love: Luna at the Slug Club Christmas party (also, basically every Luna moment ever), Sirius swallowing his pride when the Weasleys come to his home when Arthur is in the hospital, Snape's Worst Memory, The Prince's Tale, Fred and George giving Harry the Marauder's Map, the very first Christmas at Hogwarts. I'm sure I'm forgetting lots more of them, too.
