steeleblue I'd post this last night but I got lazy and didn't.
Chilli Pesto Chicken Pasta
375g bow tie pasta (because bow ties are cool)
3 chorizo sausages - cut into half-slices
750g chicken breast fillets - cut into strips (if you can buy it pre-cut for stir fry, that's pretty much perfect)
2 small red chillies - seeded and chopped (leave the seeds if you want it spicy)
3 spring onions - sliced
165g jar sun-dried tomato pesto
300ml cream
1. Cook pasta according to packet instructions.
2. Heat a large frying pan. Add chorizo and cook, stirring, over high heat for 2 minutes.
3. Add chicken, chilli and spring onion and cook, stirring, until chicken is light brown.
4. Stir in the pesto and cream and simmer for 3 minutes, or until chicken is tender.
5. Add drained pasta and toss until hot.
6. Serve with Parmesan cheese.
I make it without chorizo most of the time, unless Mitchell is here or something, but it seriously takes like 15 minutes and tastes awesome. I learned it a bit over a month ago and rarely cook anything else now.
